Shinsa-dong. It is named the ¡®dry aged steak.¡¯ The tag is pricey at about 1.5 times that of a
regular steak. Regardless, epicureans are hooked and restaurants specializing in the dish are
continuing to pop up. The hottest restaurant these days, ¡®The Barn,¡¯ located in Cheongdam-
dong, is fully booked and crowded even on a weekday lunch. What is this dry-aged menu that
is now rising as this year¡¯s biggest gourmet trend?
¡®Dry aging¡¯ is an air-drying method which matures the meat in open air. Regular steak uses
¡®wet aging¡¯ which is packaging the meat in a vacuum seal to place in a cooler for a period of
time.
Is dry aging possible then in the home kitchen by purchasing and leaving meat in mid-air?
The hefty price tag says no. Dry aging takes detailed management of not only moisture and
temperature but even airing or draft direction. If temperature rises, it promotes the enzyme
reaction that makes the meat tasty, but it also increases the chance of microbial entry. If
moisture level is too high, it makes bacteria grow, if too low, it will lead to too much meat
shrinkage.
The aging period, moisture and temperature levels are controlled by each chef from his own
experience. In general, temperature is at zero to four degrees with moisture around the 80%
range. When meat is left at this state, moisture is evaporated and meat shrinks as the surface slowly dries and decays. This results in the final product of the edible meat to shrink down to
30-60% of its original mass. During this process, the taste of this inside meat becomes
stronger as the nutrients become concentrated. Needless to say, there is not much meat left
after the shrinkage and also after cutting away the decayed surface. So the price rises to
reflect the loss.
In reality, dry aging is not a new method. It is more a revival of the old method before the
modern, widely used method of regular aging. In the 1960s when vacuum packaging was yet
to be developed, dry aging was the only aging method available.
So what does the actual dry age fridge look like? The Shilla Hotel opened its own aging cooler
to the paper for the first time since its preparation this year. There are three shelves in a 10
square meter space. Hanwoo rib eye sits on the inner shelf, on the right are seven chunks of
draft level is set at ¡®50.¡¯ Hanwoo is aged for eight weeks and
similar to making a jerky,¡± and added ¡°just like dried persimmon tastes different from fresh
persimmon, dry aged (steak) has a unique flavor.¡±
Epicureans agree saying ¡°it¡¯s difficult to say that dry aged (steak) is always better tasting.¡± If
one prefers the instant juiciness at first bite, regular steak may be better. At first, it is easy to
feel that dry aged (steak) is dry in texture. But the meat releases a deeper flavor as you chew. Chef Sung-gu Jung at another trendy restaurant ¡®GOO STK 528¡¯ says, ¡°once you get used to this (dry aged steak), regular aged (steak) will be too mild to eat.¡±
suit the process. The analysis being that moisture content in Hanwoo is low to begin with and
the acid taste from fat gets stronger as the meat dries. Even if it is possible, dry aged Hanwoo would lose its competitiveness due to the high price of the meat itself, which will rise even
more through the drying process.
Dry aged steak is best cooked rare or medium rare. Cooking more than that will give the low-moisture aged meat a dry texture. Parts with bones (called bone-in parts) are better in taste.
This is because the inosinic acid in bone spreads through the meat to give a full-bodied flavor.
Dry aged steak is recommended to those who want to enjoy a strong meat taste and unique
flavor even at the expense of additional bucks. Chef Byung-il Cho at ¡®The Steak House¡¯ said, ¡°dry aging could be a temporary trend due to the wide existing customer base for regular steak.¡±
